RECIPE OF THE MONTH from

The Connecticut Dames Dish It Up
for the Webb-Deane-Stevens Museum

 

 

Chunky Guacamole

 
 
                                                                        Preparation:  15 Minutes
                                                                        Serves 8 with cocktails

1 peeled and seeded tomato
3 scallions, roughly chopped
2 thick onion slices, roughly chopped
1 1/2 tablespoons lemon juice
1/4 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon minced fresh jalapeno pepper
Pinch of salt
2 garlic cloves (optional)
4 ripe avocados, peeled and diced


Blend all ingredients except avocado in food processor. Taste and correct seasoning if necessary. Gently stir in the cubed avocado.
Serve with tortilla chips.
